Ka is proud to announce an exclusive collaboration between chef Zac Ng and guest chef Samuel Ng, two culinary talents who share not only a Hong Kong birthplace but also a deep appreciation for blending tradition with innovation.
Inspired by their upbringing in the vibrant food scenes of Hong Kong, this collaboration explores their shared heritage through eight thoughtfully crafted courses.
Samuel Ng brings over a decade of experience spanning Italian, Australian, and Cantonese cuisines. With roots in renowned kitchens like Ho Lee Fook in Hong Kong, Stanley in Brisbane and Taphouse Sydney, Samuel’s dedication to fresh ingredients and traditional techniques shines through.
Paired with Zac’s precision and creative finesse, this menu celebrates a seamless integration of heritage, storytelling, and bold flavours.

Born in Hong Kong and raised between the vibrant food scenes of Hong Kong and Brisbane, Sam has cultivated a deep appreciation for blending tradition with innovation. With over a decade of experience spanning Italian, Australian, and Cantonese cuisines, he is celebrated for his love of traditional techniques and dedication to fresh, high-quality ingredients.
Sam has honed his craft in some of the most renowned kitchens, including Ho Lee Fook in Hong Kong and Stanley in Brisbane, and most recently led the culinary direction at Taphouse Sydney, where he brought his signature style to life in a dynamic setting. His menus reflect a seamless integration of heritage and creativity, offering diners a vibrant, ingredient-focused experience.
This collaboration embodies Sam’s passion for connecting people through food, showcasing his ability to tell stories through flavour while celebrating the rich tapestry of his diverse culinary journey.
